Despite cleaning efforts, the bacterium Listeria monocytogenes persists in food facilities. Researchers found that coexisting bacterial populations are stable and adapted to factory conditions. Developing new strategies to completely eliminate L. monocytogenes is suggested. Although cleaning remains crucial for reducing bacterial load, populations can remain stable. Differences in bacterial populations in different areas suggest high adaptation to the environment.
